Model 612 Overhead Proofer
This versatile proofer is designed and engineered for continuous high production of bread or pizza-dough pieces. A standard transpositor automatically transfers the dough pieces from a tray traveling on an upper run to a tray moving in the opposite direction on the lower run of the proofer conveyor. This process allows proper recovery and insures even moisture distribution for producing the thin skin and fine-grained structure necessary for uniform loaves. In operation, dough pieces are taken from the rounder discharged chute and automatically loaded into individual pockets. Once proofed, the dough pieces are delivered to the moulders.
